From Scratch Yellow Cake

- 1/4 cup butter, softened
- 1/4 cup shortening
- 1 1/2 cup sugar
- 2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3 eggs, at room temperature
- 1 cup milk, at room temperature
- 1 teaspoon vanilla extract
Preheat the oven to 350 degrees F. Grease and flour two 8-inch round cake pans. Alternately, this can be baked in a 9x13-inch cake pan. Combine the butter, shortening, and sugar in a mixing bowl. Beat on medium speed with an electric mixer until fluffy. In another bowl, mix together the flour, baking powder, and salt. With the mixer running on low speed, add the eggs one at a time, mixing well after each addition. With the mixer running, alternately add the flour mixture and milk in small amounts until incorporated. Add the vanilla. Scrape down the sides of the bowl as needed. Beat the cake batter on high speed for 2 minutes, then transfer the batter to the prepared pans. Bake the cake at 350 degrees F for 30-35 minutes, or until a toothpick inserted in the center comes out clean. If using a 9x13-inch pan, bake for 40-45 minutes. Let the cake cool for 10 minutes in the pans, then remove and let cool completely before frosting.
