  • 2 packages (10 ounce size) frozen chopped spinach
  • 1 tablespoon dried minced onion
  • 3 tablespoons butter or margarine
  • 1 cup herb-seasoned stuffing mix
  • 1 cup grated Parmesan cheese
  • 2 beaten eggs

In a saucepan cook the spinach and dried onion according to spinach package directions. Drain well.

In a mixing bowl stir together hot spinach mixture and butter or margarine till butter melts. Add stuffing mix and cheese. Stir in eggs.

Shape into 1-inch balls. (If desired, place spinach balls in a shallow pan.)

To freeze: Cover and freeze about 1 hour or till firm. Transfer spinach balls to freezer container. Seal, label, and freeze up to 4 months.

To Cook: Place unfrozen spinach balls on a greased baking sheet. Bake in a 375 degrees F oven about 7 minutes or till heated through. (Or place frozen spinach balls in a shallow baking pan. Bake at 375 degrees F for 15 to 20 minutes or till heated through).

Cook\'s Notes: To make handling the mixture easier, drop small mounds onto a baking sheet lined with waxed paper. Freeze about 10 minutes, then shape the mounds into balls.
