12 boneless, skinless chicken thighs, cut into 1 inch cubes

Breading
2 cups dry seasoned bread crumbs
1/2 cup grated parmesan cheese
1 tsp salt and onion powder
1/4 tsp cayenne pepper
1 cup butter, melted

Preheat oven to 375. Mix together breading ingredients. Dip chicken in melted butter and roll into crumb mixture. Place on an ungreased cookie sheet and refrigerate until ready to cook. Bake for 15-20, turning once. Serve.
