VENISON SAUSAGE PATTIES

Category: Pork

5 pounds venison, ground
5 pounds fatty pork, ground
5 Tablespoon salt
6 Tablespoons black pepper
3 Tablespoons ground red pepper
6 Tablespoons sugar
7 Tablespoons ground sage

Mix all ingredients thoroughly. Pour a little oil in skillet and fry a small amount to check seasoning amounts. Make whatever adjustments are needed. Shape into patties and fry.
