2 pounds squash
1 small jar pimentos, drained
1 onion, finely chopped
1 can cream of chicken soup
1 cup sour cream
1 stick butter, melted
2 sticks Ritz crackers

Cook squash, drain and mash with a fork. Add onions, pimentos, soup and sour cream. Pour into baking dish. Crumble crackers and melted butter together, spread on top. Bake for 35 to 40 minutes at 350 degrees.
