Chunky Chopped Pesto

7 1/2 cups basil leaves
1 1/2 cups extra-virgin olive oil
3 cloves garlic
1 teaspoon coarse salt
1/2 teaspoon black pepper
3/4 cup toasted pine nuts
3/4 cup grated Parmesan cheese

Puree basil leaves, olive oil, garlic, salt, and pepper in a food processor. Add the pine
nuts and the Parmesan and pulse until the nuts are roughly chopped.

Makes approx. 1 cup.
