Ingredients
8 slices bacon, chopped
1/4 cup apple cider vinegar
2 teaspoons fresh lemon juice
2 tablespoons sugar
1/4 teaspoon black pepper
1 (10-ounce) package fresh spinach, trimmed
1 hard-boiled egg, chopped
Instructions
In a large skillet, cook the bacon over medium-high heat until crisp. Add the vinegar, lemon juice, sugar, and pepper; mix well.
Place the spinach in a serving bowl; add the hot bacon dressing and toss to coat. Sprinkle with the egg and serve immediately.
Serves 4.
