1/2 head Romaine lettuce, rinsed and drained
1/2 head iceberg lettuce, rinsed and drained
1 ripe avocado, peeled, pitted and sliced
2 medium tomatoes, cut into wedges
1/2 cup pitted, sliced black olives
1/4 cup shredded Cheddar cheese
1 cup corn chips
dressing:
1 ripe avocado, peeled, and pitted
1 tablespoon lemon juice
1/2 cup sour cream
1/3 cup vegetable oil
1 clove garlic, crushed
1/2 teaspoon granulated sugar
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon hot pepper sauce
Line a serving bowl with Romaine leaves. Break iceberg lettuce into small pieces and add to serving bowl. Add avocado, tomatoes, olives and green onions to lettuce in bowl.
For Dressing:
Cut avocado into chunks. Mash avocado with an electric mixer, blender or by hand. Add lemon juice, sour cream, oil, garlic, sugar, chili powder, salt and hot pepper sauce. Blend until smooth.
Pour avocado dressing over lettuce mixture; toss to coat. Top with cheese and/or corn chips. Serve immediately.
