Fraases Brandied Cornish Hens

1 jar currant jelly
1/2 cup brandy
4 Cornish hens, breast bone removed, or 4 chicken breasts
Salt and pepper

Instructions:

Melt the currant jelly and brandy together in a saucepan. Set aside.

Prepare the Cornish hens (or chicken breasts) for baking. Season with salt and pepper and drizzle with butter or olive oil, if desired. Bake the hens in a 350 degree oven for 45 minutes. During the last 15 minutes of cooking, baste frequently with the jelly/brandy mixture. Remove from oven and chill the hens prior to serving.

Serves 4.
