1 medium sweet onion (such as a vidalia)
2 ct pkg mini loaves (bread)
4 Roma tomatoes each cut lengthwise in half
3 Tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
2 red, yellow, orange and/or green peppers
4 fresh Italian sausage links
2 skewers
aluminum foil
Prepare outdoor grill for direct grilling over medium heat. Meanwhile, cut onion into 4 think slices, thread onion onto skewers. Slice bread horizontally almost in half. Brush onion, bread and cut sides of tomatoes with oil; sprinkle onion and tomatoes with salt and pepper.
Place whole bell peppers, sausages and onion skewers on hot grill rack; cover grill and cook 5 minutes. Add tomatoes to grill; turn sausages and onion. Cook 7-10 minutes longer, turning tomatoes, sausage and onion 1 more time or until peppers are charred, onion is tender and sausages brown and reach an internal temp of 155.
Trasnfer peppers to sheet of alum foil and wrap tightly; set aside to allow peppers to steam. Place bread, cut sides down on grill and cook 2-3 minutes or until toasted.
When peppers are cool enough to handle, holding pepper stems, use tip of paring knife to scrape off charred skin. Cut peppers in half; remove stem and seeds. Cut peppers into 1/2 inch think slices. Remove onion from skewers; cut each slice of onion in half. Fill bread with peppers, onions, tomatoes and sausage. Cut each loaf in half to make 4 sandwiches.
