Blue Cheese Sauce

3/4 cup dry white wine
1 cup heavy cream
4 ounces blue cheese
1/2 cup butter
white pepper

In a saucepan, reduce the white wine to 1 Tbsp. Add the heavy cream and reduce by half.
In a bowl combine the cheese and butter until blended. Just before serving whisk the mixture into the reduced cream. Do not overheat. Season with white pepper.
