Basil Turkey Burgers with Sun-dried Tomato Mayo

Mayo:

A. 2 Tbs. sun-dried tomatoes, snipped
(not oil packed)
A. 1/3 C Mayo

In a small mixing bowl, pour enough boiling water over tomatoes to cover. Let stand 10 min. Drain well and pat dry. Mix together tomatoes and mayo. Cover and refridgerate until ready to serve. Makes about a 1/2 C.

Turkey patties:

B. 1/4 c fat free milk
B. 2 Tbs. white onion, finely chopped
B. 1 Tbs. fine dry bread crumbs
B. 1 Tbs. fresh basil, snipped (could
substitute 1 tsp. dried basil)
B. 12oz. ground raw turkey
B. pinch salt
B. pinch course ground black pepper

Mix together all B. ingredients and form 4 patties. Grill to desired doneness.

C. 4 lettuce leaves
C. 4 hamburger buns, split and toasted

Assemble your burgers, top with the sun-dried tomato mayo, and enjoy.

Note: I found that everyone loves the mayo so I usually make a double batch right from the start.
