Creamy Horseradish Sauce

- 1 cup heavy cream
- 1/4 cup grated horseradish, drained and squeezed dry
- 1/2 tablespoon sugar
- 2 teaspoons Dijon mustard
- 1 teaspoon white vinegar or lemon juice
- 1/2 teaspoon salt
- 1 pinch paprika
Place the heavy cream in a chilled bowl. Beat on medium speed with an electric mixer until soft peaks form. In a large bowl, combine the horseradish, sugar, mustard, vinegar, salt and paprika and mix until smooth. Gently fold the whipped cream into the horseradish mixture. Cover the bowl and refrigerate for 2 hours before serving.
