Roasted Cauliflower with Soy Ginger or Curry Yogurt Sauce

1 head cauliflower, cut into 8 wedges
1/4 c. olive oil
Kosher salt and pepper

Heat oven to 475 degrees, with rack in lowest postition. Place wedges on foil lined pan and drizzle with oil and seasonings on both sides. Cover tightly with foil and bake 10 minutes. Remove foil and bake 10 minutes on one side and then flip and cook 10 minutes. Season with salt and pepper and additional oil and serve.
Serves 6

SOY GINGER SAUCE WITH SCALLIONS
2 t. oil
2 garlic cloves, minced
1 t. ginger, minced
2 T. soy sauce
2 T. mirin
1 T. rice vinegar
1/4 c. water
1 t. sesame oil
1 scallion, sliced

Cook garlic and ginger in oil about 1 minute. Add soy, mirin, vinegar and water and simmer until syrupy. Drizzle over cauliflower and garnish with scallions.

CURRY YOGURT SAUCE WITH CILANTRO
1 t. oil
1 shallot, minced
2 t. curry
1/4 t. red pepper
1/3 c. water
1/4 c. yogurt
1 t. lime juice
2 T cilantro, minced
salt and pepper

Cook shallot in oil about 2 minutes. Stir in curry and pepper flakes and cook about 1 minute. Remove from heat and whisk in water, yogurt, lime, cilantro and salt and pepper. Drizzle over cauliflower.
