2.5 lb. boneless pork loin roast
salt and pepper
2 T. herbes de Provence
1 T. onion powder
1 T. garlic, minced
1 T. lemon juice
Preheat oven to 450 degrees.
Season pork with salt and pepper. Mix herbes de Provence, onion powder, garlic and lemon juice together and rub over pork roast.
Place roast in shallow pan in oven and reduce heat to 325 degrees. Roast 30 minutes per pound until internal temperature reaches 165 degrees. Remove from oven and let rest for 5 to 10 minutes.
CHUTNEY:
1 16 oz. can whole cranberry sauce
1/3 c. pine nuts, lightly toasted
1 t. lemon juice
1 t. herbes de Provence
1/4 t. garlic, minced
Combine all ingredients and stir thoroughly. Serve at over roast at room temperature.
