1 lb. polish sausage, sliced diagonally
1 each, green and red bell pepper, chopped
1 T. oil
2 cloves garlic, chopped
1 medium onion, chopped
2 c. sliced mushrooms
2 15 oz. cans white beans, rinsed
1 14.5 oz. can stewed tomatoes
1 t. salt and pepper
1/2 c. fresh bread crumbs
1/3 c. parsley, chopped
Preheat oven to 350 degrees. Cook sausage in dutch oven or ovenproof casserole over medium heat until they begin to brown. Add peppers and cook until softened. Remove peppers and sausage.
Saute garlic and onion in oil about 1 minute. Add mushrooms and cook until liquid evaporates. Stir in sausage, peppers, beans, tomatoes, salt and pepper. Heat to simmer. Combine bread crumbs and a little butter and sprinkle on top of beans. Bake 30 minutes. Sprinkle with parsley.
