4 chicken breast halves with skin and bones
1/4 c. gorgonzola dolce, sliced
1 T. olive oil
1/3 c. water
2 1/2 T balsamic vinegar
Preheat oven to 425 degrees. Cut deep 3 inch long pocket horizontally in long curved side of each chicken breast half. Fill with one quarter of cheese. Season chicken all over with 1 t. salt and pepper.
Heat skillet over medium high heat and brown chicken on each side, about 4 minutes each side. Bake chicken in oven for 20 to 25 minutes.
Remove chicken from skillet and heat skillet on stove, adding water and vinegar. Cook until sauce thickens slightly, 3 minutes. Serve over chicken.
