Creamy Cilantro-Lime Vinaigrette

Serves/Makes: 0.75 cup
Ready in: 1-2 hrs
- 1/2 cup extra light olive oil
- 2 tablespoons plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons rice vinegar
- 1/4 cup chopped fresh cilantro leaves, tightly packed
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground cumin
- 1 squeeze fresh lime juice
Combine all the ingredients in a blender. Process on high speed until the vinaigrette is smooth. Place the vinaigrette in a covered container and refrigerate for 1-2 hours before serving. Stir well before serving. Store leftovers in a covered container in the refrigerator for up to 3 days.
