Old French Style Potatoes With Mushrooms

  • 3 pounds potatoes
  • 2 large onions, diced
  • 8 ounces fresh mushrooms
  • 4 tablespoons olive oil
  • 2 tablespoons flour
  • 2 tablespoons parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 lemon, juice of

Peel potatoes, slice into quarters, and parboil for 3 minutes. Remove from boiling water and let cool.

Wash and slice mushrooms, blanch them in boiling water for 2 minutes. Remove from water and let cool.

In large mixing bowl, add potatoes, diced onions and mushrooms, mix together gently. Sprinkle in the olive oil and flour. Stir gently, then add the parsley, salt, pepper and nutmeg. Stir entire mixture until thoroughly combined.

Pour mixture into a large deep casserole dish. Cover and bake at 425 for 25 to 35 minutes, depending on the size of the potatoes. Check potatoes with a fork, to see if they\'re done.

Just before serving, sprinkle the juice of the fresh lemon over the potatoes.
