Serves/Makes: 8
Ready in: 2-5 hrs
- 4 tablespoons olive oil
- 2 pounds beef shoulder, cubed
- 2 large onions, diced
- 2 large carrots, peeled and diced
- 4 potatoes, diced
- 1 tablespoon mixed dried herbs like thyme, rosemary, and marjoram
- 1/2 bottle dry red wine
- 1 can (15 ounce size) diced or stewed tomatoes, undrained
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- salt and pepper, to taste
Heat the oil in a Dutch oven over medium heat. Add the beef and cook, stirring, until browned. Add the onions and cook for 3-5 minutes or until the onions begin to soften. Add the carrots, potatoes, and herbs. Mix well. Stir in the wine, tomatoes, paprika, and garlic powder. Reduce the heat to a simmer (medium-low), cover, and cook for 2-3 hours or until the meat and vegetables are tender. Add additional liquid if needed. Season to taste with salt and pepper. Serve the goulash with dumplings or noodles if desired.
