Smoked Sausage And Corn Chowder

Ready in: 30-60 minutes
- 1 package (12 ounce size) fully cooked smoked beef sausage, cut in 1/2" slices
- 1 cup sliced green onions
- 2 teaspoons vegetable oil
- 2 cans (14.5 ounce size) vegetable broth
- 2 cups frozen potatoes O'Brien
- 1 can (13.5 to 15 ounce size) cream-style corn
- 1/8 teaspoon ground red pepper
- 1/2 cup heavy cream
In a large saucepan, cook onions in oil over medium heat 3 to 4 minutes or until tender. Stir in sausage, broth, potatoes, corn and red pepper. Bring to a boil and reduce heat to low. Simmer uncovered for 20 minutes. Stir in cream and heat through. Garnish with additional sliced green onion, if desired.
