Apple Cider Scones

- 1 cup grated apple, cored but not peeled, slightly packed
- 2 1/2 cups all-purpose flour
- 1/3 cup sugar
- 1/2 teaspoon salt
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/4 cup unsalted butter
- 1/2 cup apple cider or apple juice

- 1/4 cup sugar
- 1/2 teaspoon cinnamon
- thin sliced apple (peel on) for garnish
Preheat oven to 425 degrees F. Line the top sheet of doubled up baking sheets with parchment paper. Prepare apples and set aside. In a food processor, place the flour, sugar, salt, baking powder, baking soda and cinnamon and process to blend. Add butter and pulse until you have a coarse, mealy texture. Turn out into a large bowl. Make a well in the center and stir in apple cider or juice, then fold in grated apples. Turn mixture out onto a lightly floured work surface or board. Knead gently to make a mass. Sprinkle board with sugar and cinnamon (mixing with fingertips to distribute cinnamon). Toss scone dough on this and turn once or twice to coat. Pat dough into a thickness of 1 inch and cut in 2 1/2 inch circles or cut into 6-8 wedges. Garnish with a thin apple slice. Bake until lightly golden, 14-18 minutes.
