Apple Cider Cupcakes

2 1/2 cups all-purpose flour
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/4 tsp allspice
1/2 cup butter, room temperature
2 cups sugar
2 tsp vanilla extract
2 eggs, room temperature
3/4 cup buttermilk, at room temperature
3 cups shredded apples, (I used Figi and the big holes on the grater)

Apple Cider Cream Cheese Frosting
8 oz. cream cheese, room temperature
1/2 cup butter, room temperature
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp allspice
4 cups of powdered sugar
2 tbsp of apple cider



Instructions
1.preheat the oven to 350 degrees F and line a muffin pan with cupcake liners
2.in a medium bowl whisk together flour, baking powder, salt, cinnamon, ginger and allspice then set aside
3.in the bowl of a stand mixer beat the butter until it becomes light and fluffy
4.add in the sugar and vanilla extract and continue to beat for another 2 minutes
5.add in the eggs one at a time and mix until completely incorporated
6.pour in the buttermilk and mix (batter will look lumpy but do not worry)
7.turn off the mixer and dump in the flour mixture
8.slowly turn the mixer back on and allow it to work until ingredients are just combined
9.remove from mixer and fold in the shredded apple
10.fill the cupcake liners 3/4 of the way full
11.place in the oven to bake for 20-25 minutes or until a toothpick can be inserted into the center and removed clean
12.remove from oven and allow to cool

Apple Cider Cream Cheese Frosting
1.using a stand mixer or electric mixer beat the cream cheese until it is light and fluffy
2.add in the butter and continue to beat until fluffy
3.slowly add the powdered sugar, cinnamon, nutmeg, and allspice
4.add in the apple cider
5.Frost the cupcakes with the frosting
