2 whole vanilla beans
1 1/2 cups vodka
1/2 cup water
1 cup granulated sugar

In a 3 cup glass container combine vanilla beans with Vodka. Cap and allow to set at room temperature for 3 weeks. Remove vanilla beans as strain liquid through cheese cloth into a bowl.

In medium sauce pan, combine water and sugar over medium heat. Bring to a boil, stirring constantly, until sugar is dissolved. Remove from heat and cool. Stir into vanilla mixture. Pour mixture into a bottle and cap; allow to set at room temperature for 1 month.

Makes two cups of extract.
