Quick New Orleans Chicken

- 3 pounds chicken pieces
- 1/2 teaspoon dried thyme, crushed
- salt and pepper, to taste
- 1 tablespoon oil
- 1 can (14.5 ounce size) Cajun-style stewed tomatoes
- 1 medium green bell pepper, cut in strips
- 1 stalk celery, sliced
- 2 cloves garlic, minced
Sprinkle chicken with thyme; salt and pepper to taste. In large skillet, brown chicken in oil 15 minutes; drain. Stir in remaining ingredients; cover and simmer 10 minutes. Uncover and cook over medium-high heat until thickened and chicken is done.
