Italian Easter Ham and Cheese Pie

Ready in: 1-2 hrs
- 1 double pie crust dough
- 2 pounds ricotta cheese
- 1 cup grated Romano cheese
- 2 tablespoons parsley, minced
- 4 eggs, beaten
- 1 cup mozzarella or Fontinella cheese
- 1/2 pound chopped ham, cooked sausage or other Italian lunch meat
- 1/2 teaspoon salt
- black pepper
- 1 egg, beaten, to brush on crust
Line 9 or 10 in pie crust with half of crust. Mix remaining ingredients and pour into pie shell. Top with remaining crust. Brush crust with beaten egg. Bake pie at 350 degrees F for one hour.
