Ready in: 1-2 hrs

  • 1 double pie crust dough
  • 2 pounds ricotta cheese
  • 1 cup grated Romano cheese
  • 2 tablespoons parsley, minced
  • 4 eggs, beaten
  • 1 cup mozzarella or Fontinella cheese
  • 1/2 pound chopped ham, cooked sausage or other Italian lunch meat
  • 1/2 teaspoon salt
  • black pepper
  • 1 egg, beaten, to brush on crust

Line 9 or 10 in pie crust with half of crust. Mix remaining ingredients and pour into pie shell. Top with remaining crust. Brush crust with beaten egg.

Bake pie at 350 degrees F for one hour.
