7 artichokes, trimmed, peeled & chokes removed. You may use frozen too if you want.
2 cups water
2 lemons

In a large bowl, add 2 cups water, 2 tsps of salt and the juice of 2 lemons. As you cleant the artichokes, put them in the water so they don't turn too brown.

1 small onion, diced
3 ribs of celery, diced
2 carrots, diced
2 cloves of garlic, minced
6 pieces of bacon, cut into small pieces
1 cup chicken stock
1 cup cream
4 cups fresh spinach, chopped
8 oz jack cheese, shredded

Cook the bacon, remove from pan when it is crispy, set aside. Add onion, carrot, celery to the bacon fat. Saute 5 minutes. Add garlic, saute 1 minute. Pour in the artichokes and all the water they are in; also add the chicken stock. Bring to a simmer and turn down the heat. Simmer for a half hour. Blend with an immersian blender. It will be smooth with some strigy bits and some leaf chunks. Add the cream. Bring to a simmer. Whisk in the cheese slowly until melted. Add the spinach and remove from heat and remove from heat. Serve with crisp garlic bread. Garnish with bacon.
