Baked Penne With Sausage

- 8 ounces penne pasta
- 1 pound Italian turkey sausage (uncooked)
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 can (14.5 ounce size) crushed tomatoes
- 1 can (14.5 ounce size) diced tomatoes
- 1 1/2 cup shredded light mozzarella cheese
- 1 cup grated Parmesan cheese
Preheat the oven to 375 degrees F. Coat a baking dish with cooking spray. Cook pasta in plenty of lightly salted boiling water. Meanwhile, squeeze the sausage out of the casings into a large nonstick skillet. Toss with the onion and garlic and turn the heat to medium. Cook, stirring frequently, until the sausage is no longer pink. Stir in the crushed and canned tomatoes and bring the mixture to a boil. Immediately reduce the heat to a simmer for 15 minutes. Toss the pasta and sausage together. Stir in 1 cup of mozzarella and all the Parmesan cheese and transfer the mixture to the prepared baking dish. Sprinkle the remaining 1/2 cup of mozzarella over the top. Bake for 15 minutes, or until the cheese is melted and the top golden.
