3/4 cup Girards Sundried Tomato Artichoke Dressing
1 lb. dry fettuccine pasta
2 tbsp. vegetable oil, divided
12 oz. chicken and pork sausage, casings removed
1 bunch Broccolini
Salt and freshly ground black pepper
1/2 red onion, sliced
2 plum tomatoes, quartered
Grated Parmesan cheese
Preheat the oven to 425° F.
Place Broccolini, onion slices and tomato pieces into a baking dish and spread out into one layer. Drizzle with 1tbsp. oil and sprinkle with salt and pepper. Roast 15 to 17 minutes or until the vegetables are tender.
Bring a large pot of water to a boil and cook pasta according to package directions and drain.
While the pasta is cooking, heat 1 tbsp. oil in a skillet over medium-high heat. Add the sausage and chop it up with the back of a spoon, while it is cooking. Remove from heat once it is cooked thoroughly.
Drain and discard any oil in the skillet.
Add cooked pasta and vegetables to the skillet with the sausage and toss all together. Add Girard’s Sundried Tomato Artichoke Dressing and continue to heat until the pasta is warm.
Serve with Parmesan cheese.
