1/2 cup corn kernels, fresh or frozen
Pinch crushed hot red pepper
1/4 cup tarragon vinegar
1 tbsp. lime juice
2 tbsp. chopped parsley or cilantro
1/4 tsp ground white pepper
1 lb small peeled shrimp or calico scallops
Salt, to taste
Stir together and bring to a boil. Lower temperature and simmer for 7 minutes.
