Category: Trifles
Prep Time:       Cook Time:       Total Time:

BROWNIES
1 1/2 cups milk chocolate chips, divided
1/2 cup unsalted butter, cut up
1 cup all-purpose flour
1/2 cup unsweetened cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
3 eggs
1 1/2 teaspoons vanilla extract
1/2 cup caramel bits or 15 individually wrapped caramels, chopped
1/2 cup salted cocktail peanuts, coarsely chopped

TOPPING
1 cup purchased caramel topping, divided
4 cups vanilla ice cream
2 (2.07-oz.) Snickers candy bars, chopped

1. Heat oven to 350. Line 9-inch square pan with foil; coat foil with cooking spray.

2. Melt 1 cup of the chocolate chips and butter in medium heatproof bowl set over saucepan filled with 1 inch almost simmering water (bowl should not touch water). Let stand until chocolate is almost melted, stirring occasionally. Remove bowl from heat; stir until butter and chocolate are melted and smooth. Cool.

3. Whisk flour, cocoa, baking powder and salt in small bowl. Beat sugar, eggs and vanilla in large bowl at medium speed 2 minutes or until light and fluffy. At low speed, beat in chocolate mixture. Beat in flour mixture. Stir in remaining 1/2 cup chocolate chips, caramel bits and peanuts. Spoon and spread in pan.

4. Bake 30 to 35 minutes or until toothpick inserted in center comes out with some crumbs attached. (Do not overbake.) Cool completely on wire rack.

5. Remove brownies from pan; cut into 1-inch cubes. Place in bottom of 12 (8-oz.) canning jars. Pour scant tablespoon caramel over brownies in each jar. Top with scoop of ice cream and chopped candy. Drizzle with remaining caramel.
