1 1/2 lb pork tenderloin
1/2 cup dry sherry
1 tbsp soy sauce
4 tbsp brown sugar
1/2 cup honey and sesame seeds
1/3 cup soy sauce
1 tbsp sesame oil and dry sherry
1 garlic clove, crushed
1/2 tsp grated ginger
1 whole green onion, finely chopped
Spinach leaves

In a dish large enough to hold the tenderloin, combined the sherry soy sauce and brown sugar. Add the pork and marinate 1-2 hours, turning occasionally. Remove the tenderloin.

Spread the honey on a plate. Roll the pork in honey, then sesame seeds. Place the tenderloin in a roast pan, roast at 350 for 20 minutes or until meat thermometer registers 15 Let stand 5 minutes, then slice thinly on the diagonal.

Combine remaining ingredients for dipping sauce. Place in a bowl in the center of a serving platter. Surround the bowl with the spinach leaves and arrange pork on top. Serves 6

Variation. Combine all ingredients in a reclosable bag and marinate 4-12 hour. Grill tenderloin on hot grill and sear on all sides and continue to cook until internal temperature reaches 165, 30-45 minutes.
