1/4 cup bottled tomato salsa
1/4 cup finely shredded Cheddar or jalapeno cheese
2 tablespoons mayonnaise

Cut 6 hard-cooked eggs in half lengthwise. Remove yolks and set whites aside.

In a small bowl, mash the yolks with a fork. Mix in the desired ethnic flavorings listed here. Spoon about 1 tablespoon yolk mixture into each reserved white half. Chill to blend flavors, with the egg halves tightly covered.

Garnish with chili powder, cilantro leaves or additional cheese.
