1/4 cup salsa
3 tbsp mayonnaise
3 scallions, thinly sliced
3/4 lb sliced deli turkey
8 slices sourdough bread
4 slices Pepper-Jack cheese
4 tbsp (1/2 stick) butter

In a small bowl, combine the salsa, mayonnaise, and scallions, mix well. Divide the turkey evenly over 4 slices of bread, top each with a slice of cheese. Spread the salsa mixture evenly over the cheese then top with the remaining slices of bread.

In a large skillet, melt 2 tbsp butter over low heat. Place the sandwiches in the skillet, and cook for 2 to 3 minutes. Add the remaining butter to the skillet then turn the sandwiches over and cook for 2 to 3 minutes, or until the cheese is melted. Serve immediately. Makes 4 sandwiches
