1 (6.5) oz jar marinated artichoke hearts, drained, liquid reserved
1 onion, chopped
1 clove garlic, peeled and minced
8 eggs, lightly beaten
1 cup shredded cheddar, Swiss and parmesan cheese
1/4 cup snipped fresh parsley
1/4 tsp pepper and Italian-style seasoning
Dash hot pepper sauce and Worcestershire sauce
1/4 cup dry bread crumbs
Preheat oven to 325. Lightly grease mini-muffin pan. Place reserved liquid from marinated artichoke hearts in a medium saucepan. Over medium heat, slowly cook and stir in onion and garlic until tender. In a food processor, mix together artichoke hearts, eggs, cheeses, seasonings and sauces. Blend until smooth. Stir in the onions, garlic and bread crumbs. Fill the muffin cups approximately 3/4 inch full with mixture. Bake 12-15 minutes, until firm and lightly browned. Serve warm. Makes 4 dozen bites.
