AMBASSADOR SCALLOPS

3 tbsp butter
2 cups French bread coarse crumbs
1 clove garlic, minced
1 3/4 lbs scallops
2 clove garlic, minced
2 tbsp butter
3-4 tbsp chopped parsley
Lemon wedges
In a 10 inch skillet, heat butter until foam begins to subside. Add bread and garlic. Stirring, cook until golden brown. Remove from skillet; set aside.
In a skillet, saute scallops and garlic in butter for 2-3 minutes or until scallops are opaque. Sprinkle with parsley. Place scallops in a serving dish and sprinkle with crumbs, garnish with parsley. Serves 4
