Spare Ribs in Honey-Chili Sauce

1 cup chili sauce
1/2 cup honey
1/4 cup minced onion
2 tbsp. red wine (optional)
1 tbsp. Worcestershire sauce
1 tsp. Dijon mustard
3 lb. pork spare ribs
Salt and pepper

Combine chili sauce, honey, onion, wine if desired, Worcestershire sauce and mustard in a small saucepan. Cook and stir over medium heat until mixture comes to a boil. Reduce heat and simmer, uncovered, 5 minutes.

Sprinkle spare ribs with salt and pepper. Place on a rack in a roasting pan; cover with foil. Roast at 375 degrees for 35 to 45 minutes. Uncover and brush generously with sauce. Roast 45 minutes more, brushing with sauce every 15 minutes, until spare ribs are fully cooked and tender. Cut into serving portions and serve with remaining sauce. Makes 4 servings.
