1 cup all purpose flour
6 Tbsp unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup old fashioned oats
6 Tbsp unsalted butter, softened
3/4 cup sugar
1 large egg
1/4 cup ricotta cheese
1 tsp vanilla extract
1/2 cup finely chopped hazelnuts, toasted
1 cup sweetened dried cherries
3 ounces dark chocolate, coarsely chopped
Heat oven to 350 degrees F. Coat cookie sheets with cooking spray.
In a medium mixing bowl, sift together flour, cocoa powder, baking soda and salt; whisk in oats until combined.
In a large mixing bowl, using a mixer on medium speed, beat butter and sugar until creamy - about 1 minute. Beat in egg, ricotta and vanilla until combined. Reduce mixer speed to low and gradually beat in flour mixture until just combined. Stir in hazelnuts, cherries and chocolate until combined.
Drop rounded teaspoons of dough onto cookie sheets, spacing about an inch apart. Bake 12 minutes or until cookies are well risen, set, and crisp around edges. Cool 1 minute before transferring to wire racks to cool completely. Makes 2 dozen cookies
