1 dozen eggs
1/2 cup milk
1 lb deli ham, diced
1/2 cup (2 oz) shredded mozzarella cheese
3 scallions, thinly sliced
1 small red bell pepper, finely chopped
Preheat the oven to 400. Coat an 8-inch square baking dish with nonstick cooking spray.
In a medium bowl, whisk the eggs and milk until well combined. Add the remaining ingredients; mix well. Pour into the baking dish and bake for 45 to 55 minutes, or until firm in the center. Allow to sit for 5 minutes then cut and serve. 4 to 6 servings
NOTE: You can mix all these ingredients together, pour into the baking dish, cover, and chill overnight. Then all you will need to do in the morning is bake it.
