6 cups frozen shredded hash brown potatoes
1 1/2 cups shredded Monterey Jack cheese with jalapeno pepper or shredded cheddar cheese
2 cups diced cook ham or Canadian style bacon
1/2 cup sliced green onions
8 eggs, beaten
2 1/2 oz cans evaporated milk
1/4 tsp salt and pepper
Grease a 3-quart rectangular baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham and onions. In a large mixing bowl, combine eggs, and next 3 ingredients. Pour over potato mixture in dish. Bake, uncovered, at 350 for 45-55 minutes. Let stand 45 minutes before serving. Serves 12
