1 cup flour
1 tsp salt
1/2 tsp baking powder
3/4 cup grated cheddar cheese
1/3 cup butter
1/2 lb bacon, crisply fried, drained and crumbled
3 egg yolks
2 tsp water
1 egg white, lightly beaten

Preheat oven to 400. Grease baking sheets with cooking spray. Combine dry ingredients in a large bowl. Add cheese. Cut in butter with pastry blender until mixture resembles coarse crumbs. Add bacon.

Combine egg yolks and water. Beat until blended. Sprinkle over flour mixture. Toss lightly with fork until dough forms a ball. Press dough to form a 5 to 6 inch pancake. Flour pancake lightly. Roll between 2 sheets of waxed paper into a circle, 1/8 inch thick. Cut out 2 1/2 inch rounds with a cookie cutter. Brush with egg white. Bake at 450 for 8-10 minutes or until lightly browned. Cool 1 minute before remove to cooling rack.
