CHRISTMAS TOFFEE

1 cup sugar
1/2 pound butter (2 sticks)
3 tablespoons water
1/2 teaspoon vanilla
3 Hershey bars, chopped
1/2 cup chopped pecans or walnuts

Combine first three ingredients in a heavy saucepan and cook over medium heat until brown like a Heath bar. Watch carefully -- it takes about 20 minutes to cook. If using a candy thermometer, cook to 300 degrees (hard crack stage). Stir in vanilla and pour onto a cookie sheet.

While hot, top with the chopped candy bars. Spread evenly over hot toffee. Sprinkle with pecans or walnuts. Cool in refrigerator, then break into pieces.

Makes about 150 1-inch pieces.

Store in an airtight container.
