FOUR CHEESE SAUCE

2 oz each mozzarella, gruyere, Fontina and provolone cheese, cut into strips
1/4 cup butter
1/2 tsp flour
1 1/8 cup milk
Salt and pepper, to taste
Grated cheese

Melt butter; add flour to blend and start to bubble, add milk, and mix well. Cool on low until it thickens, stirring frequently to prevent from sticking. Add cheeses stirring until cheese have melted. Season with salt and pepper.
