1/2 c. fresh lemon juice
1/2 c. sugar
2 tsp. minced scallions or yellow onion
1 tsp. Dijon mustard
1/2 tsp. salt
2/3 c. canola oil
1 Tbsp. poppy seeds
1 large head of Romaine lettuce
4 oz. or 1 c. shredded Swiss cheese
1 c. slivered almonds
1/4 c. dried cranberries
1 apple, cored & diced
1 pear, cored & diced
In a blender or food processor, combine the lemon juice, sugar, onion, mustard and salt. Process until well blended. With the motor running, add the canola oil in slow steady stream until mixture is thick and smooth. Add poppy seeds and process just a few seconds more to mix.
In a large serving bowl, combine the lettuce, shredded Swiss cheese, almonds, dried cranberries, and the diced apple and pear. Add enough of the dressing to lightly coat the salad. Serve remaining dressing on the side. Serves 4
