GREEN BEANS AND PORTOBELLO SAUTE

1 1/4 lbs fresh green beans, trimmed and cut in half
Coarse sea salt
2 tbsp extra-virgin olive oil
1 tbsp butter
1 medium onion, chopped
2 Portobello mushroom caps, halved and thinly sliced
1/2 cup dry sherry

Simmer green beans in salted boiling water for 5 minutes (do not overcook). Drain. Heat skillet to medium heat. Add oil and butter; sauté onions 2 to 3 minutes. Add mushrooms, season with salt and pepper. Saute 3 to 5 minutes... add green beans and sherry. Cook an additional 1 to 2 minutes. Transfer to a serving plate. Serves 4-6
