BBQ BAKED BUTTER BEANS

4 slices bacon, chopped
1 medium onion, diced
8 cups fresh or frozen lima beans
1 cup ketchup and barbecue sauce
1/4 cup maple syrup
2 tbsp yellow mustard and dark brown sugar
1/2 tsp dry mustard
1/4 tsp salt
1/4 tsp lemon pepper

Heat oven or grill to 325. Cook bacon and onions in a large saucepan on the stove or over a grill or side burner until the bacon is brown and crisp and the onions are starting to brown and become transparent, about 5 to 7 minutes.

Pour onions and bacon into a 2-quart casserole or Dutch oven and add all of the remaining ingredients, stirring to combine. Cover casserole. Bake 1 hour in conventional oven (or 1 hour in a covered grill over indirect heat). If the beans are not tender, bake an additional 15 to 20 minutes. Serve hot. Tip: Add 2 cans or bags of frozen corn to make BBQ Succotash.
