1/4 cup (1/2 stick) butter, softened
1/4 cup creamy peanut butter
1/2 cup brown sugar
1/4 cup white sugar
2 tablespoons milk
1/2 teaspoon vanilla
1 cup flour
2 cups semisweet chocolate chips
1 stick butter
1 1/2 cups powdered sugar
In the bowl of mixer, beat 1/2 stick of butter and peanut butter until smooth. Add sugars and beat on medium for about a minute, until fluffy. Add milk and vanilla and beat on medium until combined. Add flour and beat until fully mixed.
Roll mixture into balls and place on a wax paper lined baking sheet. The size is up to you, I did mine a little smaller than a walnut. Place in the freezer for about 20 minutes, just long enough to firm up.
Place powdered sugar in a small bowl. In a microwave safe bowl, heat chocolate chips and 1 stick of butter, stopping at 20 second intervals to stir. Once melted and fully combined, dip the cookie dough balls in the chocolate, one at a time, removing by sliding a fork underneath. Immediate place in the powdered sugar, and quickly coat. Slide fork underneath again and place back on wax paper lined sheet.
Once truffles have set up a bit, give them a second coating in the powdered sugar.
