3 medium-sized onions, chopped
1 green bell pepper, chopped
5 stalks celery, chopped
1/2 cup olive oil
1/4 cup chopped fresh parsley
2 cloves garlic, minced
2 (14 oz) cans tomato sauce
1 cup dry white wine
1 tsp salt
1/2 tsp each pepper and mixed Italian Dry Herbs
8-10 Salmon steaks, each about 1 inch thick

IN a large frying pay, aaute vegetables in oil until limp. Stir in parsley and garlic and saute until coated with oiul. Stir in sauce, wine and seasonings. Cover loosely; simmer for 1 hour. Arrange steaks in a single layer in a baking pan, salt lightly and pour sauce over all. Bake for 30 minutes at 350. Serves 8-10
