2/3 cup cornmeal
1 tbsp butter
3/4 tsp salt, divided
1 2/3 cups cold water
11/2 cups shredded Asadero or Queso Quesadilla cheese
2 tbsp flour
2 eggs
1 cup milk
1/2 pkg (5oz) frozen chopped spinach, thawed, squeezed dry
1/2 cup chopped red pepper
1 tbsp minced jalapeƱo pepper
1 clove garlic, minced

Stir together cornmeal, butter, 1/2 teaspoon salt and water in 11/2 quart casserole; cover. Microwave on high for 3 minutes; stir. Continue microwaving 4 to 5 minutes or until very thick, stirring every 2 minutes. Spread onto bottom and sides of 9 inch pie plate, forming crust. Toss cheese with flour. Beat eggs; stir in milk, spinach, peppers, garlic, remaining 1/4 teaspoon salt and cheese. Pour over crust. Bake at 350 for 50 to 55 minutes or until set.
