2 tsp rosemary
4 cloves garlic, minced
2 tsp salt
1/2 tsp pepper
1/4 cup olive oil
2 chickens, cut into serving pieces
1/2 cup apricot jam
Juice from 1 lemon
2 tbsp Dijon mustard

In a bowl, combine the first 5 ingredients and rub the mixture over the chicken. Cover and refrigerate for 1 hour.

Preheat grill to medium heat and grill until cooked about half way through.

In another bowl, combine jam, lemon juice and mustard. Brush chicken with apricot mixture and continue cooking, basting often until cooked through and the chicken is done. Serves 6-8
